Prep Time: 10 minutes
¾ c. celery – diced into ¼” pieces
1 orange – peeled and sliced into thin sections
1 lemon – peeled and sliced thinly
1 large shallot, peeled and sliced thinly
1 bulb of fennel, sliced thinly
1 avocado sliced into small sections
Fresh squeezed juice from one lemon
Gently toss all ingredients except the orange slices and the avocado together in a large bowl.
Place on serving plates, add the avocado and arrange the orange slices in a decorative manner last.
Squeeze some additional juice from any leftover slices of orange on the salad as well.
Note: Be sure to make this salad at the same time as you slice the avocado because fresh avocado will turn brown quickly. It also breaks easily and that is the reason for not tossing it with the other ingredients. You can kick up the flavor profile by drizzling great quality balsamic vinegar right before serving. A recommendation is Sicilian Lemon balsamic vinegar if available.
